Savory is the name of a group of culinary herbs in the genus Satureja. The most common of these is summer savory, which, as the name suggests, is a summer annual. Winter savory grows year-round and is used when the summer herb is unavailable.
The savory herbs are used in Armenian, Georgian, Bulgarian and Italian cuisine, as well as in the Acadian stew. fricot. They are also a key ingredient in herbes de Provence.
