A gringa is a variety of tacos, originally from Meixco City, which consists of a flour tortilla filled with cheese, al pastor meat, and sweet and savory garnishes, usually including pineapple . They are then grilled in the same manner as a quesadilla. Urban legends claim that the dish was invented when an American girl, or "gringa," asked for a flour tortilla with melted cheese.
