Ginkgo nut is the seed of the ginkgo tree (Ginkgo biloba). Not technically nuts, the kernel of the ginkgo tree's fruit ripen in September and October, and are used extensively in Chinese and Japanese cuisine. Typical preparations are skewered, grilled, or prepared in congee rice porridge or chawan mushi savory custard.
