Tuile are biscuits, or cookies, made with a batter of butter, egg white, and sugar, which are traditionally formed around a cylindrical or conical mold while still warm and become crisp and delicate when cool.
They can be used to hold a small scoop of sorbet or ice cream, or served as a garnish on a dessert. The term is sometimes also used for savory biscuits, especially with cheese, made using a similar technique.
