Feuillantine is a French pastry made with laminated dough, cut into rectangles, and layered with a sweet or savory ingredient. It is typically a light, flaky dish involving delicate flavors such as honey or fruit.
The term can also refer to a crispy confection made from very thin sweetened crêpe dentelles which are crumbled into small shards; these are used as toppings for pastries or are included in chocolate confections. When used in this way a more normal spelling is feuilletine.
