Sablés are a French shortbread cookie with a buttery, crumbly texture, usually made with a fluted edge. They are made with a simple recipe of flour, butter, sugar, and sometimes egg yolk, mixed until a "sandy" consistency is reached; this may be the origin of the cookie's name, which means "sandy" in French.
Sablés are sometimes flavored with lemon, almond, raisins, or jam, and can also be made savory, with parmesan, bell pepper, black pepper, or other flavorings.
