A savory pie is a pie filled with savory ingredients. Meat, eggs, cheese, and vegetables are common fillings for savory pies.
The technique of baking ingredients in a pastry crust has been known since ancient times, and a recipe for a savory chicken pie has been found on a Sumerian tablet from around 1900 BCE. For much of history, however, the crust of the pie was probably not meant to be eaten. In numerous medieval sources, savory ingredients were baked in a sturdy pastry shell called a coffyn, which had the function of holding the meat, vegetables, and juices together during cooking. Some of these coffyns were sturdy enough to act as storage containers for the pies, and were retained for months, with the steam holes blocked up with solid butter.
