Candying is a process of preserving food, usually fruit, by immersing it in a hot sugar syrup until osmotic action removes all the water from the fruit and replaces it with sugar syrup.
The term "candied" is also sometimes used to refer to a sweet flavor note in an otherwise savory dish.
