Dried tangerine peel, called chenpi in Chinese, is a seasoning used in savory and sweet Chinese dishes. Hunanese dried citrus peel chicken (chen pi ji), which is the ancestor of the Chinese-American dish orange chicken, derives its unique flavor from this ingredient.
