Dampfnudel (German, "steam noodle") is a traditional German steamed dumpling made from a sweet yeast dough. The dough is shaped into soft, round buns and steamed in a pot, often with a mixture of milk and butter or water, which creates a golden, crisp bottom while leaving the top soft and fluffy. Dampfnudeln can be served as either a savory or sweet dish. In the sweet version, they are typically accompanied by vanilla sauce, fruit compote, or powdered sugar, while the savory version may be paired with a creamy or wine sauce. Dampfnudeln are particularly popular in southern Germany, especially in Bavaria and Swabia.
