A twice-baked potato is a potato dish that starts by fully baking potatoes with their skins, then cutting them open and removing the interior flesh, mashing it with additions usually including dairy and cheese, and returning the savory mash to the skins, and returning them to the oven to brown the mash and crisp their outer skin.
