Welsh rarebit is a savory bread and cheese dish served across the British Isles. It is fundamentally a melted cheese sauce, enriched with butter and cream or beer, poured over hot buttered toast, but regional variations in the sauce and bread are common.
Historical sources give the dish a Welsh origin in at least the 14th century, and in the Welsh variant a Welsh cheddar or Caerphilly is used. An Irish rarebit uses an Irish cheddar, and a Scottish rarebit uses Dunlop cheese. In England, a farmhouse cheddar is preferred and Worcestershire sauce and wine are added to season the toast.
