A bouchée is one of two small French pastries. A savory bouchée is a small round puff pastry case with a savory filling such as vegetables, seafood, or mushrooms. A sweet bouchée is a petit four made with small sponge cakes which are hollowed out and filled with confectioner's custard or jam and coated with colored fondant icing.
