Filloa is a thin fried pancake, very similar to a crêpe, from the Spanish regions of Galicia, Asturias, and Léon. They are not typically filled like crêpes, however, being typically served with jam, cream, or honey. They are also always made with white flour, rather than the whole wheat or buckwheat flour often used in French cuisine.
In some parts of Spain, filloa are associated with the hog slaughter, and they are prepared as a savory dish, with pig blood added to the batter and bacon used as a filling.
