Brasato al Barolo is an Italian dish from Piedmont. It is a beef roast, typically from the shoulder or chunk, which is browned with a sofritto of onions, carrots, and celery, and then braised for hours in Barolo wine. Once the beef is completely tender, it is removed and the wine and vegetables are reduced a bit, producing a savory sauce that is served with the meat. Mashed potatoes, polenta, and other hearty dishes are a traditional accompaniment.
