Pitha refers to a diverse category of traditional dumpling or pancake-style dishes from the Indian subcontinent, particularly prevalent in Bangladesh and in the eastern part of India. Pithas are typically made from rice flour, though wheat flour and less commonly, local root vegetables such as elephant foot yam may be used.
Preparation methods include steaming, frying, griddling, and, less frequently, boiling or oven-baking. Most varieties are unleavened and cooked on a stovetop.
Pithas can be either sweet—often filled or garnished with ingredients like grated coconut, jaggery, or sometimes molasses — or savory, sometimes incorporating fillings such as lentils or vegetables.
Traditionally, pithas are consumed as snacks, often accompanied by tea (chai), or as festive treats during regional celebrations and seasonal festivals.
