Citrus is a large family of fruits, marked by their fragrance, juiciness, and peel. All citrus fruits have a leathery external rind, sometimes called the zest. Underneath this is a white, spongy layer, called the pith. Beneath that, nearly all citrus have a segmented juicy body, called the pulp.
