Citron is a citrus fruit. It is one of the ancestral species of citrus from which all other modern citrus descend, either through natural hybridization or artificial breeding. Unlike most citrus fruits, the citron does not have a sweet and juicy fruit, but has instead been bred to produce a thick and less bitter peel. It is therefore often used to make candied peel.
Use caution when reading this word in French. The French term for citron is cétrat, while the French word citron means "lemon" in English.
