The endocarp of a fruit is the inside of the fruit which directly contains the seeds. In many culinary fruits, especially citrus, the endocarp has been bred for increased sweetness, tenderness, and size; in others, the mesocarp is the part that is eaten.
In citrus fruits, the endocarp is further divided into segments, each of which has many juice vesicles .
