Non-climacteric fruits are fruits that do not ripen after being picked. Unlike climacteric fruits, there is no biochemical process inside these fruits that will convert starch to sugar once they are removed from the plant. As a result they must stay connected to the plants circulatory system until the desired level of ripeness is reached.
