Non-climacteric fruits are fruits that do not ripen
after being picked. Unlike climacteric fruits, there is no biochemical process inside these fruits that will convert starch to sugar once they are removed from the plant. As a result they must stay connected to the plants circulatory system until the desired level of ripeness is reached.
A partial list of non-climacteric fruits includes:
- All berries including blackberry, blueberry, raspberry, strawberry
- Cherry; note that other stone fruits are climacteric
- Fig
- Grape
- Olive
- Rambutan
- All members of the custard apple family including pawpaw and cherimoya
- All summer squash
- Watermelon
- Coconut
- All citrus including oranges, lemons, and limes
- Pineapple
- Pomegranate
