Rice vermicelli, also called rice noodles, rice sticks, and mei fun or mai fun, is a thin form of noodle. It should not be confused with cellophane noodles, a different Asian type of vermicelli made from mung bean starch or rice starch rather than rice grains themselves.
Rice vermicelli is a common ingredient used all over Asia. Other names for it include bí-hún (Hokkien), bīfun (Japan), bíjon or bihon (Philippines), bihun (Malaysia and Indonesia), mee hoon (Malaysia, Indonesia, and Southern Thailand), and bún (Vietnam).
