Bún bò Huế, anglicized as bun bo Hue, is a Vietnamese noodle soup, made with beef bones, rice vermicelli, fermented shrimp paste, lemongrass, and chilies. It is often garnished with mint leaves, bean sprouts, and lime.

Vietnamese, bún "noodle", "beef", Huế the name of the former capital of Vietnam (1738-1775 and 1802-1945).
Note that in the city of Huế, the soup is called simply "bún bò."
