The mung bean (Vigna radiata), alternatively known as the green gram, maash٫ mūng, monggo, or munggo, is a small green legume in the Fabaceae family, which is widely cultivated in Asia. They are used both whole and split, and are also sprouted.
In South Asia, they are often used in dals, while in China and southeast Asia they are processed into starch and used to make cellophane noodles and jellied desserts. Sprouted mung beans are often used in stir fries and salads across East Asia.
