Chickpeas, also known as garbanzo beans, are legumes grown extensively in the Eastern Mediterranean and India. They are one of the oldest cultivated legumes and are central to many cuisines across the world.
In Indian cuisine, chhole, chole, or kabuli chana is the term used for Western-style large, light chickpeas. Chana usually refers to the smaller, darker seeds with a rough seed coat, sometimes called desi chana or boot.
