Bhatura is a North Indian fried bread. It is made with a white flour and and yogurt (dahi) dough, and is either yeast-risen or leavened with baking powder. Round pieces of the dough are fried in oil until they puff up in into a soft, elastic, chewy bread.
It is a common part of a midday meal, especially when paired with chhole as half of chhole bhature.
