Semolina is hard durum wheat that has been coarsely milled. It is typically used to make couscous, pasta, and sweet puddings. The term semolina is sometimes used for grains other than wheat as well.
Semolina is sometimes made with softer common wheat, which results in a finer beige product. In the United States, this is called farina.
