Durum is a species of wheat. It is the second-most widely cultivated species in the world, representing some 5% of world wheat production.
Durum is descended from wild emmer through a process of domestication that eliminated the hull from the seeds. This made it much easier to thresh, as the grains are released from the chaff without the need for additional hulling.
