The adzuki bean, commonly known as red bean, is a round, dark red bean, common in the cuisines of China and Japan. It is often sweetened and used as a filling for mochi, pastries, and other desserts; when it is ground into a paste, it is known in Japanese as anko, in Chinese as hong dou sha (or just dou sha), and in Korean as patso or danpat-so when sweetened.
