Sheep cheese, or brebis, is cheese made with the milk of a ewe, a female sheep.
In particular the term brebis is used in French cheesemaking to refer to fresh, spreadable, acid-set cheese. Compare chevre, made with goat milk, and fromage blanc, made with cow's milk.
