Ricotta is a soft Italian whey cheese, made from sheep, cow, goat, or water buffalo milk whey left over after the production of other cheeses. It a very soft and creamy cheese, which can be as loose as cottage cheese, or salted and aged into a firmer and more strongly flavored product.
