The pastry is shaped like a breast, tipped by a maraschino cherry,
reflecting the martyrdom of St. Agatha, which included the cutting off
of her breasts. It is typically made with a short-crust pastry, topped
with candied citron, sheep's-milk ricotta and chocolate, which is
covered in an icing sugar glaze.
