Tempura is a Japanese style of deep-fried battered foods. It is most commonly prepared with light shellfish, including shrimp and scallops, squid, kisu, anago and vegetables. Tempura batter is made with flour, egg, and ice water, and is beaten very lightly to prevent gluten formation, which keeps the breding light and airy.
