Washoku (和食) is the Japanese term for traditional Japanese cuisine. This cuisine is based on rice, miso soup, and dishes from the Japanese archipelag emphasizing seasonal ingredients. Seafood is prominent, and is served raw as sashimi or sushi, grilled, or lightly battered as tempura. Noodles based on wheat and buckwheat, as udon and soba, are staple foods. Simmered foods, including oden, are also included.
Contrast chūka ryōri, which describes Japanese-Chinese cuisine, and yōshoku, which describes Western food that has been adapted to Japanese tastes.
