Gane, sometimes ganeten, is a Japanese dish of vegetables, especially sweet potatoes, cut into thick strips, deep fried in a batter similar to tempura batter. It is a regional specialty of Kagoshima Prefecture, which is the top sweet potato production area in Japan.
