Sambar, or sambhar, is a South Indian dish of lentils (dal) and tamarind (kokum). It is made every day in traditional south Indian homes, especially in Tamil Nadu. It has many regional variations, ranging from the type and amount of spice to the range of vegetables used in the dish. It is closely related to rasam, with which it is often paired in a traditional vegetarian meal.
