Fenugreek (Trigonella foenum-graecum) is a plant used as an herb and a spice, common in Indian and Middle Eastern cuisine. It has an aroma similar to maple syrup or burnt sguar, and a slight bitterness, which can be moderated by toasting and can be greatly reduced with an overnight soak.
Fenugreek is a common ingredient in spice mixes, including garam masala , panch phoron , and sambar .
