Pot stickers, or jiānjiǎo, also called Chinese dumplings in the UK, are a style of jiaozi dumpling that is fried in a pan to create a browned, crispy lower surface and then quickly steamed. They are popular across East and Southeast Asia, under a variety of names and regional styles. In particular note yaki-gyōza , Japanese gyoza prepared in this style, often with a strongly garlic-flavored filling and guotie , a Northern Chinese dumpling made with longer, unsealed edges.
