Niter kibbeh is a spiced clarified butter used extensively in Ethiopian and Eritrean cuisine. It is prepared by clarifying butter and then simmering herbs and spices such as besobela, koseret, fenugreek, cumin, coriander, turmeric, korarima, cinnamon, and nutmeg in it for a time before straining them out.
