Choucroute Garnie (Alsatian French), Schlactplatte (Swabian German), or Bernerplatte (Berne Swiss) is a sauerkraut and meat dish from the Alsatian-Swabian region of Europe. It is made by sautéeing sauerkraut with duck or goose fat, onion, garlic, caraway, juniper, bay leaf, white wine and Kirschwasser, and then "garnishing" the sauerkraut with a wide variety of fresh and preserved meats, including pork and beef sausage, smoked pork loin and shoulder, bacon, beef tongue, pigs' knuckles, and calf or pork liver dumplings.
