Snails, or escargots (French), are terrestrial molluscs that have been prized as food since antiquity.
The most common species of snails used for food are Helix pomatia, the "Roman" or "Burgundy" snail; Cornu aspersum aspersu, called the "petit-gris"; and Helix lucorum.
