Badische Schneckensuppe is a traditional dish, associated with the Baden region of Germany, made with vineyard snails. It is made by sautéing shallots, garlic, leeks, carrot, and celery in butter, and then adding finely chopped snails. Broth is added and is thickened with sour cream, and finished with chervil and white wine.
