Datemaki (伊達巻) is a Japanese rolled omelette, made with eggs, hanpen (whitefish), dashi, mirin and sugar, which is cut into slices and served as rolls. It is a festive variant of the common tamagoyaki, and is associated with New Year celebrations as part of o-sechi ryōri.
