Lemon peel is the peel of a lemon, an ingredient that is commonly used to flavor cocktails or as a garnish. The peel is often refered to as lemon zest, especially when it is grated and included in baked goods. Lemon peel is also often candied, and is an important part of mixed peel. Lemon peel contains large amounts of lemon oil, and conveys a strong, citrusy aroma to dishes.
Botanically, the "peel" contains both the flavorful zest and the bitter, unpalatable pith. In common cooking practice, the word peel actually refers only to the peel.
