To crystallize a food is to transition it from a liquid, unstructured state to a regular repeating pattern of its molecules. This typically requires careful control of temperature and may require the use of a crystal seed.
Crystallized sugar is rock candy. When chocolate sets, its cocoa butter is crystallized.
The term "crystallized" is also sometimes used to describe candying, especially of fruits.
