Aillade is a southern French term meaning "with garlic". It is used for sauce aillade, a vinaigreete with garlic; bread à l'aillade, which is toasted bread rubbed with garlic and sprinkled with olive oil; aillade albigeoise, which is another name for aioli; and aillade à la toulousaine, which is aioli prepared with blanched and pounded walnuts.
