Eggplant Parmigiana, also parmigiana di melanzane, melanzane alla parmigiana, eggplant parmesan, is an Italian dish of sliced eggplant layered with mozzarella and Parmesan cheese and tomato sauce, then baked. The term parmigiana is sometimes used outside Italy to refer to other foods that are breaded and layered with cheese, then baked in a tomato sauce (see alla Parmigiana).
One of the most common variations encountered in the United States is chicken parmigiana, which uses a breaded chicken breast in place of the eggplant.
