Alla Parmigiana (Italian, "in the style of Parma") refers to an Italian cooking style in which food, typically vegetables or meat, is prepared by layering it with a tomato-based sauce, cheese (often Parmesan or mozzarella), and sometimes breaded and fried, before being baked in the oven. In particular, the term refers to parmigiana di melanzane, a dish of eggplant prepared in this fashion.
The name comes from the region of Parma, known for its production of Parmesan cheese. In the United States, the technique has also been adapted to chicken parmigiana and is occasionally applied to other dishes as well.
