Kadhi or karhi is a dish originating from the Indian state of Rajasthan but commonly consumed all over South Asia. It consists of a thick gravy based on gram flour, and contains vegetable fritters called pakoras, to which dahi is added to give it a slightly sour taste. It is often eaten with cooked rice or roti. Varieties of karhi include those from Rajasthan, Maharastra, Gujarat, Punjab and Sindh, which are located in present-day India and Pakistan.
