Fougasse is an enriched French bread, typically associated with the Provence region. Historically, it was a thin bit of dough thrown into the oven to test its heat before committing the loaves, but it is now often enriched with olive oil, cheese, garlic, or anchovies.
It is closely related to the gibassier, and also to the rich Christmas bread called pompe à l'huile.
