Axoa (Basque, pronounced "Atch-oh-a") is a typical Basque veal stew, seasoned with onions and tomatoes, and always flavored with red piment d'Espelette.
In the French Basque region, a version with chicken may be found that is likely to be called Poulet Basquaise.
